Common chicory, Cichorium intybus, is a somewhat woody, perennial herbaceous plant of the dandelion family Asteraceae, usually with bright blue flowers, rarely white or pink. Many varieties are cultivated for salad leaves, chicons (blanched buds), or roots (var. sativum), which are baked, ground, and used as a coffee substitute and food additive.
There are three main varieties of Chicory; Witlof, Radicchio and Sugarloaf.
Pain de Sucre is a Sugar-loaf type. It is self-blanching and somewhat resembles a cos lettuce.
It has a sweeter taste than most chicories which tend to be quite bitter.
Pain De Sucre is often steamed, lightly simmered until tender or eaten raw in salads.
Sow from April - July 1cm deep into well-prepared soil. Thin to 20cm between plants as they grow.
Harvest individual leaves or cut the whole plant when the heart has filled out.
